Spicy but Healthy Vegetarian Dragon Noodles

If you want to be healthy but you like spicy food then this recipe is for you. Vegetarian Chinese recipe loaded with delicious chili and ginger.

  • 9 oz noodles (pasta or spaghetti can be used too!)
  • 1 carrot
  • 1 thumb ginger, fresh
  • 1 clove garlic
  • 3 spring onions
  • 1 chili
  • 1 large dollop of your favorite spicy sauce
  • 2 tbsp soy sauce
  • 2 eggs
  • 1 small handful of parsley, fresh
  • salt to taste

How to Make the Tofu and Spinach Wraps

Noodles should be cooked in boiling water. Wait till after you’ve prepared the vegetables if the noodles are rapid cooking and take less than 8 minutes to cook.

The carrots should be grated, julienned, or spiralized, and the ginger, garlic, spring onions, and Chile should all be diced.

All of these ingredients should be cooked in oil in a big skillet for three to four minutes.

Garlic and ginger should not be added until the midway point.

To prevent the ingredients from sticking together, whisk them with a spatula.

Stir in the soy and hot sauces after adding them. To give the sauce a more “creamy” appearance, whisk with a few tablespoons of water.

2 tablespoons soy sauce, 1 generous dollop of favorite spicy sauce

Give the eggs a brisk stir with a fork after breaking them into a small bowl or cup.

Add the egg mixture to the pan and thoroughly stir it in.

Move the egg around quickly with the spatula so that it cooks in a scrambled fashion.

The process shouldn’t take longer than two minutes, and once the egg is done cooking, remove the skillet from the heat.

Salt, parsley, and sesame seeds, if used, should all be added.

Drain, rinse, and add the cooked pasta to the pan at this point.

Make sure to thoroughly combine everything so that the noodles are coated in your flavorful, spicy sauce.
