Ingredients
- 1 Tbsp olive oil
- 8 boneless, skinless chicken thighs
- Salt and black pepper to taste
- 1 small yellow onion, minced
- 3 cloves garlic, minced
- 3 Roma tomatoes, diced
- 1 cup chicken stock
- 1 tsp herbes de Provence
- 1⁄4 cup pitted Kalamata olives, roughly chopped

How to Make The Provencal Chicken
In a sizable sauté pan set over medium-high heat, warm the olive oil.
Black pepper and salt should be used to season the chicken all over.
For a total of roughly 6 minutes, add the chicken to the pan and cook, flipping once, until charred and well browned. If necessary, work in two batches to avoid crowding the pan.
Put the chicken on a platter and set it aside.
The tomatoes, onions, and garlic should all be added to the same pan and cooked for about 5 minutes, or until the tomatoes and onions are very soft.
Bring the mixture to a simmer after adding the broth and Provence herbs.
Return the chicken to the pan and cook it for another 20 minutes or so, flipping the chicken over halfway through, with the lid off.
Add the basil as a garnish if you’d like, then stir in the olives.
