Your family’s new favorite dish is going to be this fantastic ground chicken chili! It’s a hearty bowl of chili that contains two different kinds of beans.

There is so much flavor from the spice mixture, bell pepper, and fire-roasted tomatoes.

A tasty and filling supper is created by combining ground chicken with black beans and kidney beans. This dish is inherently devoid of gluten. It stays nicely both in the freezer and refrigerator.

Ingredients

  • 2 tablespoons olive oil
  • 1 medium yellow onion, diced
  • 1 red bell pepper, finely diced
  • 3 cloves of garlic, minced
  • 3 cups chicken stock
  • 1 teaspoon ground cumin
  • 1 teaspoon kosher salt
  • 1 teaspoon smoked paprika
  • ½ teaspoon chili powder
  • 1 pound ground chicken
  • ½ teaspoon ground black pepper
  • 1 (14-ounce) can of fire-roasted, diced tomatoes
  • 1 (14-ounce) can of kidney beans, drained and rinsed
  • 1 (14-ounce) can of black beans, drained and rinsed

How to Make The Refreshing Nectarine Salad?

In a big Dutch oven, heat the oil over medium-high heat. When it’s hot, add the diced bell pepper and onion, and sauté for 5 minutes while stirring.

Garlic that has been minced should be added and cooked for 30 seconds. Salt, paprika, cumin, chili powder, and ground black pepper are then added. For one minute, stir and saute.

Break up the ground chicken with the back of a spoon before adding it to the pot. Cook it until browned, about 4 to 5 minutes.

To the pot, add the diced tomatoes, kidney beans, black beans, and chicken stock. Turn up the heat and slowly bring it to a boil.

15 minutes should be spent simmering undercover. After that, open the cover and stir. Give the chili 15 more minutes to simmer before reducing.

Serve right away or store for up to 4 days in the fridge.
