Ingredients
- 9 oz firm tofu
- 1 onion
- 1 bell pepper, red
- 1 tbsp olive oil
- 1 tbsp smoked paprika
- 1 tsp curry powder
- 4 slices of whole-grain bread
- 1 handful of cherry tomatoes
- 2 tbsp parsley, fresh
- Salt and pepper to taste
How to Make the Veg Tofu Scramble
After draining, crush the tofu into small pieces onto a fresh kitchen towel. Slice the red bell pepper and onion.
The bell pepper and onion are sautéed in olive oil that has been heated at medium-high heat in a frying pan.
Stir for about 30 seconds after adding the curry powder and smoked paprika.
The tofu should be tightly wrapped in the kitchen towel, pressing out as much moisture as you can.
Shake the contents of the towel out into the pan, and then simmer for 4-5 minutes while stirring occasionally.
Slice your tomatoes, then toast your bread.
Toast with parsley on top should be served with scrambled tofu. Another fantastic technique to prepare the bread and tomatoes is as follows:
Pick up a pan, pour in the remaining oil, and cook the bread with a little salt over medium heat. After that, add the tomatoes and cook for a further one or two minutes.
Serve with parsley and scrambled tofu. Wonderful!
