Chicken weight loss Salad Ingredients:

  • One lb cooked chicken breast meat, Four cups diced
  • Two cups seedless red grapes, halved
  • One cup celery, cut in One half lengthwise then sliced, (from three sticks of celery)
  •  Half cup red onion, finely chopped (half medium red onion)
  • One cup pecans, toasted and coarsely chopped

Chicken Salad Recipe Dressing

  • Half cup mayonnaise
  • Half cup sour cream, or plain Greek yogurt
  • Two Tbsp fresh lemon juice
  • Two Tbsp dill, finely chopped
  • Half tsp  according to taste
  • Half tsp black pepper

  1. Place the pecans on a dry skillet over medium heat and toast for five minutes, tossing frequently until golden brown and fragrant then transfer to a cutting board and coarsely chop and set aside to cool.
  2. In a  mixing bowl, mix diced chicken, halved grapes, sliced celery, chopped onion, and cooled pecans.
  3. In a mixing bowl, add all of the dressing ingredients and toss to combine.
  4. Add all of the dressing to the salad, or add it to taste and stir until the salad is evenly coated with dressing. Cover and refrigerate until ready to serve.
