Ingredients for Greek Salad Ingredients

  • One romaine lettuce head, chopped
  • Half medium red onion, thinly sliced
  • Half bell pepper, chopped
  • One cup cherry or grape tomato, halved (or slice heirlooms when in season)
  • One fresh English cucumber, sliced
  • One avocado, peeled, pitted, and sliced
  • Half cup kalamata olives, sliced into thirds
  • Four oz feta cheese, crumbled

Greek Dressing Ingredients

  • Three Tbsp cooking oil
  • Three Tbsp fresh lemon juice, (from One large lemon)
  • One garlic clove, pressed or finely minced
  • Half tsp sea salt
  • One-fourth tsp black pepper

  1. Rinse, chop and spin dry romaine lettuce and transfer to a large salad bowl. 
  2. Add the remaining salad ingredients to the bowl: sliced red onion, sliced bell peppers, halved tomatoes, diced cucumber, diced avocado, kalamata olives, and feta cheese.
  3. Combine all Greek dressing ingredients in a mixing jar and shake to combine. Just before serving, drizzle dressing over the salad to taste and toss to combine.
