Ingredients for Greek Salad Ingredients
- One romaine lettuce head, chopped
- Half medium red onion, thinly sliced
- Half bell pepper, chopped
- One cup cherry or grape tomato, halved (or slice heirlooms when in season)
- One fresh English cucumber, sliced
- One avocado, peeled, pitted, and sliced
- Half cup kalamata olives, sliced into thirds
- Four oz feta cheese, crumbled
Greek Dressing Ingredients
- Three Tbsp cooking oil
- Three Tbsp fresh lemon juice, (from One large lemon)
- One garlic clove, pressed or finely minced
- Half tsp sea salt
- One-fourth tsp black pepper

Direction
- Rinse, chop and spin dry romaine lettuce and transfer to a large salad bowl.
- Add the remaining salad ingredients to the bowl: sliced red onion, sliced bell peppers, halved tomatoes, diced cucumber, diced avocado, kalamata olives, and feta cheese.
- Combine all Greek dressing ingredients in a mixing jar and shake to combine. Just before serving, drizzle dressing over the salad to taste and toss to combine.
