Ingredients for Avocado Chicken Salad Ingredients

  • Two large cooked chicken breasts, shredded or chopped
  • Two large avocados
  • One cup of corn, from one cooked cob
  • Six oz lean bacon, cooked and chopped
  • One-fourth cup of Chives, (or green onion), chopped
  • Two Tbsp Dill, chopped, or to taste

Salad Lemon Dressing

  • Three Tbsp  freshly squeezed lemon juice
  • Three Tbsp  cooking oil/olive oil
  • 1 tsp salt according  to taste
  • 1/8 tsp black pepper

  1. Dice or shred the Two large cooked chicken breasts and place them into a  mixing bowl.
  2. Peel and pit Two large avocados, slice them into small pieces and add to the mixing bowl.
  3. Add one cup of cooked corn (freshly cooked corn is best), toss in one-fourth cup of chopped green onion, chopped bacon, and two Tbsp fresh Dill.
  4. Add dressing ingredients to a mixing bowl and stir to combine. Drizzle over your salad and toss to combine. Serve with slices of hard-boiled egg if desired.
