Low-Carb Meal Arugula and Grape Salad

It can be challenging to find keto-friendly meals, but it doesn’t have to be.

There are numerous foods that allow you to enjoy all of your favorite flavors while sticking to a low-carb diet.

Although the arugula and grapefruit salad recipe is meant to be a side dish, it is simple to add protein and fat to turn it into a complete meal. For added flavor, we’ve added avocado and bacon to this salad.

Ingredients

  • 1 pink grapefruit
  • 4 thin slices of red onion, separated into rings
  • 3 cups arugula

For dressing

  • 1 Tbsp roasted and salted shelled pumpkin seeds or sunflower seeds

How to make Arugula and Grape Salad

Grapefruit should be cut lengthwise.

Remove the peel and white pith from one half by setting it flat side down on a chopping board.

Slice grapefruit segments, reserving the membranes.

Repeat with the other half of the grapefruit.

Arugula should be divided between two salad plates.

Add red onion and grapefruit segments to the top.

Add 1 to 2 tablespoons of creamy Ranch dressing to each salad. Add pumpkin seeds on top.
