Ingredients
- 1 pink grapefruit
- 4 thin slices of red onion, separated into rings
- 3 cups arugula
For dressing
- 1 Tbsp roasted and salted shelled pumpkin seeds or sunflower seeds

How to make Arugula and Grape Salad
Grapefruit should be cut lengthwise.
Remove the peel and white pith from one half by setting it flat side down on a chopping board.
Slice grapefruit segments, reserving the membranes.
Repeat with the other half of the grapefruit.
Arugula should be divided between two salad plates.
Add red onion and grapefruit segments to the top.
Add 1 to 2 tablespoons of creamy Ranch dressing to each salad. Add pumpkin seeds on top.
