Ingredients
- 2 cups broccoli florets
- Nonstick cooking spray
- 4 cups frozen hash brown potatoes, thawed
- 2 tablespoons coarsely snipped fresh chives
- 6 ounces thinly sliced, lower-sodium cooked honey ham, chopped
- 1 cup shredded reduced-fat Cheddar cheese
- 8 eggs, lightly beaten
- ½ cup fat-free milk
- ½ teaspoon salt
- ½ teaspoon black pepper
- ¼ teaspoon garlic powder

How to make the best eggplant pasta?
Broccoli should be cooked for three minutes in boiling, lightly salted water in a medium pot. Drain again after a cold water rinse.
Spray cooking oil in a 2-quart rectangle baking dish. Toss the prepared dish with the potatoes and chives. Add cheese, ham, and broccoli as garnishes.
Combine the eggs, milk, salt, pepper, and garlic powder in a medium bowl. Over the potato mixture, pour the egg mixture. Overnight chill, covered with foil.
Heat the oven to 350 degrees F before serving. Bake for 50 to 55 minutes with the lid off, or until the eggs are set to 160 degrees F.
For the final 10 minutes, if required, cover with foil to prevent over-browning.
