A mouthwatering salad topped with luscious nectarines is impossible to refuse. Fruit salads usually seem to work, which always impresses me!

This stone fruit is indeed the ideal complement, resting on a bed of bulgur, arugula, avocado, and goat cheese.

Because bulgur has excellent filling qualities and is porous, it readily absorbs the flavors of the components in the dressing.

Check out the salad greens available at your neighborhood market or grocery shop.

I’ve suggested adding spicy arugula or lamb’s lettuce to the salad to contrast the sweetness and add a little kick.

Many salad dishes go beautifully with a lovely goat’s cheese, as do those that call for other crumbly cheeses like feta.

Once more, it’s a fantastic way to balance the sweet and savory flavors in this recipe and it also adds some protein, which you know I love!

If you’ve never tried fruit in a salad before, you’re in for a delightful surprise.

Hemp seeds will provide an additional source of beneficial fats, similar to avocados.

How to Make The Refreshing Nectarine Salad?

Cook 13 cups of dried bulgur as directed on the package.

Using a sharp knife, cut the nectarine or peach in half lengthwise, then turn it over to split it in half.

Slice the pit into thin pieces after removing it. Slice or cut avocado into cubes. Crumble or dice the cheese.

To prepare the dressing, combine olive oil, balsamic vinegar, honey, juice from half an orange, and a dash of salt in a small bowl.

In a serving bowl, arrange the salad’s components in the following order: grains, greens, cheese, and fruit.

Add some chopped chives and hemp seeds. To taste, add 1/2 tsp each of salt and black pepper. Add the dressing, stir it around a bit, and serve right away.
