Chicken Caesar Pasta Weight Loss Salad

Ingredients for salad


  • Two lb chicken breasts
  • One & half tsp garlic powder
  • One tsp dried oregano
  • Two tsp dried basil
  • Two tsp dried parsley
  • Salt  according to taste
  • black pepper

Caesar Dressing

  • Half cup mayonnaise
  • One tbsp Dijon mustard
  • One tbsp Worcestershire sauce
  • One tbsp white wine vinegar
  • One fresh lemon – juice only
  • One cup of grated Parmesan cheese
  • One tsp anchovy paste or two anchovies
  • Two garlic cloves
  • Salt according to taste
  • black pepper
  • One-third cup of olive oil

Pasta Salad

  • One lb dry pasta
  • One large green bell pepper diced
  • Three oz croutons
  • Five oz romaine lettuce
  • Half cup shaved Parmesan cheese

  1. Cook pasta according to the box instructions, drain and set aside to cool completely.
  2. You will want chicken and pasta to be no warmer than room temperature when mixing the salad.


  1. Cut chicken in half, widthwise, if the chicken breasts are very thick.
  2. Season chicken fillets with salt, pepper, herbs, and garlic powder on both sides.
  3. Preheat a cooking pan over medium heat, and add some oil. Cook chicken for 5-7 minutes on each side, until completely cooked through. (Exact time will depend on the thickness of each chicken breast.)
  4. Cool chicken to room temperature and cut into cubes.

Caesar Dressing

  1. Combine all ingredients except the olive oil in the food processor.
  2. Start to pulse the ingredients and slowly drizzle in olive oil through the opening at the top. When it’s all smooth, turn off the food processor and scrape the sides and bottom of the bowl if needed.

Pasta Salad

  1. Mix cooked and cooled pasta, cooked chicken, diced bell pepper, chopped Romaine lettuce, croutons, shaved Parmesan cheese, and Caesar dressing together in a large bowl. Carefully mix until it’s all evenly coated in dressing.
