Ingredients Kale Weight Loss Salad Recipe with Honey Lemon Dressing
Ingredients for Dressing
- Four Tbsp lemon juice
- Two Tbsp cooking oil/olive oil
- One Tbsp sugar or honey
- Half tsp salt
- One-fourth tsp black pepper
Ingredients for Kale Weight Loss Salad Recipe
- One bunch of kale, (8 cups loosely packed) well rinsed
- One cup of craisins, dried cranberries
- One small red onion, thinly sliced
- One apple, (I used a crisp fuji apple)
- One pear, (firm)
- One cup of pecans, toasted on a dry skillet

Direction
- Mix all dressing ingredients and stir together until honey dissolves then set aside.
- Wash and strip kale leaves. Chop in small size pieces. Washed the chopped leaves a second time to ensure there isn’t any dust hidden in the curly leaves then dry them in a salad spinner.
- Place kale in a mixing salad bowl, top with 1 cup of craisins, and drizzle with dressing. Use hands to stir well and massage lightly until kale just starts to wilt. Cover and refrigerate for 4 hours or overnight.
- Before serving, add sliced apples, sliced pears, thinly sliced onions, and toasted pecans. MIX to combine.

I love the kale salad. I didn’t have pecans but I had almonds. I love pecans so I’ll try those next time
