Ingredients
- 1 tsp olive oil
- 1 sweet potato
- ½ onion
- 3 beets, pre-cooked
- ¼ cup water
- 1 tsp sweet paprika
- ¼ tsp salt
Dressing
- ½ lime, juiced
- 1 tbsp olive oil
- Pinch salt
Toppings
- 1 handful peanuts
- 2.5 oz low-fat feta cheese (use regular if you prefer)(roughly 75g)
- 1 spring onions

How to Make The Chicken and Dumplings Recipe
Grab a large baking sheet and preheat the oven to 200C/400F.
Cut the sweet potatoes into bite-sized bits after giving them a brisk wash. Cut the beets into bite-sized slices in the same way.
1 sweet potato, 3 beets, pre-cooked
Peel and cut the onion into chunks. Everything goes into the tray. Now add olive oil, paprika powder, and salt. Give it a good mix.

Off it goes into the oven for 45 minutes.
Get the dressing ready, in a small bowl mix together lime, olive oil, and a bit of salt.

After 45 minutes check if the potatoes are tender. If yes, get the bake out of the oven.
Time for the feta cheese, spring onions, and peanuts. Sprinkle all on top of the dish.
