  • ¾ cup instant couscous (¾ cups = 130g)
  • ½ cup water
  • ½ tsp salt
  • 2 tsp olive oil
  • 1 tsp cumin, ground
  • 1 tsp ginger powder (Chop it finely)
  • 1 tsp paprika powder (or use 3 tsp Ras El Hanout to replace the cumin, ginger, and paprika powder)
  • ½ pomegranate
  • ½ medium zucchini
  • ½ bell pepper, red
  • ½ orange
  • ¼ orange zest
  • 1 fig, fresh (don’t worry if you can’t find one)
  • 1 tbsp raisins
  • ¼ cup parsley, fresh
  • Salt and pepper

How to Make The Moroccan Couscous Salad

In a large bowl, combine the couscous with the boiling water, cover, and let sit for five minutes.

When you get back to the couscous, fluff it up with a fork and stir in the cumin, ginger, olive oil, and paprika powder.

Oranges should be washed before being chopped and added to a bowl of couscous along with the orange zest that has been granted.

Add the pomegranate seeds, bell pepper, and zucchini which have been finely diced, to the bowl. Add the raisins and, if used, the radishes, in slices, now. If using, add fig.

The last but most important stage is flavor time! Wash, chop, and add parsley to the salad. Add fresh mint or cilantro, if you have any leftovers.

Add a dash of black pepper and salt for seasoning.

Toss everything together to quickly create and serve your visitors, family, and friends the healthiest, most mouthwatering salad they’ve ever seen.

Health Benefits

Did you know that couscous is a North African staple, used more frequently in soups and stews than in salads? However you choose to consume it, couscous is loaded with health advantages.

Selenium is a trace mineral that is extremely difficult to detect in many meals yet is abundant in couscous.

Antioxidant selenium works to prevent plaque accumulation in our arteries and LDL cholesterol, supporting good cardiovascular health.

Couscous has more than 60% of the daily required amount in just one dish!

Since studies have shown that selenium deficiency might be the root of muscular weakness, deterioration, and weariness, selenium may also aid in increasing muscle mass.

Last but not least, there are too many health advantages to name in this Moroccan couscous salad’s vegetables and fruits.

Just a few, though, like the significant amounts of vitamin C in red bell pepper that support immune system stimulation and the substantial amounts of antioxidants in zucchini that defend the body from oxidative damage.
