You won’t return once you master the art of making creamy scrambled eggs like these!
What’s not to love about them if they are more flavorful and higher in protein than a typical scramble?
They go well with simple soft scrambled eggs on toast, but we also serve them with crispy caramelized green onions and a sprinkle of fresh parsley.

Ingredients
- 4 eggs
- ¼ tsp salt
- 4 tbsp low-fat cream cheese
- 1 ½ tbsp olive oil
- 1 green onion (thinly sliced)
- 1 clove garlic (chopped)
- 4 slices whole grain bread (toasted)
- 1 handful of parsley, fresh
- Salt and pepper to taste

How to Make the Veg Tofu Scramble
In a medium non-stick pan, warm up a teaspoon of olive oil. Add the minced garlic and thinly cut green onions.
Until onions have decreased and turned a deep golden brown, cook at medium-low heat.
Stir the eggs, 1/4 tsp salt, and 2 tbsp cream cheese while they’re frying. Remove the onions and garlic from the pan, and reserve them for later use.
Add the egg mixture and the final tablespoon of olive oil to the same pan.
Unattended at medium-low heat, cook the egg until a thin layer of cooked egg coats the skillet’s edge.
Eggs should be pushed across the bottom of the skillet and all the way around it using a rubber spatula and broad sweeping motions.
For about 2 minutes, keep moving the eggs around and across the skillet; they should still appear runny on top.
On the bread slices, spread the remaining 2 tablespoons of cream cheese.
Add salt and pepper to taste before topping the bread with the fluffy eggs, followed by the fried onions and fresh parsley leaves.
A small amount of fresh parsley, salt, and pepper to taste add optional favorite sauce if using.
Health Benefits
Despite the fact that cream cheese and eggs are generally quite healthy, there are a few steps you can take to prevent hazardous components from contaminating your scramble.
Using low-fat cream cheese for preparing scrambled eggs with cream cheese is advised.
Because, yes, cream cheese provides protein, but we don’t want the additional calories and fat!
By switching from full-fat to low-fat cream cheese, the fat content is reduced from 27% to 11.5%.
If you’ve ever made scrambled eggs at home, the bottom of the pan was likely coated with a thick layer of butter.
Don’t get us wrong, butter is GREAT, and no food is horrible; it’s only a matter of quantity.
However, switching to olive oil is one strategy to reduce the amount of saturated fat in your diet if you have health issues.
Unsaturated fats, like those found in olive oil, are good for you and essential for absorbing nutrients and energy without raising your bad cholesterol.
We use whole-grain bread, which further distinguishes this scrambled eggs recipe as being healthful.
Foods made with whole grains have much less sugar and much more nutrients than those made with refined grains.
Additionally, the energy they carry dissipates gradually, keeping you fuller longer.
